A colourful, flavourful, healthier alternative to the classic English fry-up, one of the first dishes on our menu and still going strong.

Here, rather than a recipe, is a list of what to include. Starting with the toast, layer on the ingredients, ending with the poached egg, good grindings of salt and pepper, the drizzle of sweet chilli sauce and, if you have them, the basil leaves to garnish.

4 slices of good bread, toasted
100g humous
100g guacamole
4 poached eggs
4 tomato halves, grilled or roasted
180g flat mushrooms, lightly coated in oil and grilled or roasted
drizzle of sweet chilli sauce
coarse black pepper
basil leaves, to garnish
